How to properly store Jamón Ibérico at home
Storing Jamón Ibérico correctly: How to preserve its taste and quality
A high-quality Jamón Ibérico is characterized by its intense aroma, fine texture, and aromatic fat. Proper storage is crucial to ensure these qualities are maintained for as long as possible.
It makes a big difference whether you have a whole ham, a boneless piece, or pre-sliced and vacuum-packed Jamón at home.
Storing a whole Jamón Ibérico correctly
A whole Jamón Ibérico on the bone does not usually require a refrigerator. An ideal location is a cool, dry, and well-ventilated place away from direct sunlight and strong temperature fluctuations.
Once cut, the exposed surface should be protected. Using some of the ham's own fat to cover the cut surface is ideal for this. Afterward, the Jamón can be covered with a clean, breathable cloth.
It is important to remove only as much rind and fat as is necessary for the current serving. The remaining part protects the ham from drying out.
Storing sliced Jamón Ibérico in the refrigerator
Different rules apply to pre-sliced and vacuum-packed Jamón.
The unopened package should be stored in the refrigerator according to the instructions on the packaging. Once opened, the ham should be resealed well and consumed within a few days if possible.
Serving temperature plays an important role, especially with high-quality Jamón Ibérico de Bellota. The fat only develops its characteristic soft texture and aroma when the ham is no longer too cold.
Our Jamón Ibérico de Bellota from Fabeiro is aged for over 36 months and traditionally hand-carved with a knife.
Allow time before serving
Take the package out of the refrigerator about 20 to 30 minutes before serving.
This allows the fat to soften and the typical aromas of the Jamón to shine. Ideally, open the package just before serving and carefully separate the thin slices.
Jamón Ibérico is perfect for an aperitif, a tapas platter, or as a fine appetizer.
How long does Jamón Ibérico last after opening?
A whole Jamón can be kept and enjoyed over a longer period if stored correctly. Temperature, humidity, and protecting the cut surface are the deciding factors.
Sliced Jamón is more delicate. Once opened, it should be stored well-sealed in the refrigerator and consumed as soon as possible.
Smaller vacuum-packed portions therefore have a practical advantage: you only open the amount that is actually going to be served.
Common storage mistakes
Avoid the following in particular:
storing a whole Jamón in the refrigerator permanently
leaving the cut surface unprotected for a long time
exposing the ham to direct sunlight or a heat source
serving sliced Jamón directly while ice-cold
Proper storage is straightforward but contributes significantly to preserving the aroma and texture of a good Jamón Ibérico.
Enjoying Jamón Ibérico at home
A good Jamón doesn't need much: thin slices, the right temperature, and a little time for its aroma to develop.
Those who buy pre-sliced Jamón have a particularly easy way to enjoy it. Take the package out of the refrigerator in good time, open it just before serving, and enjoy at room temperature.
